Why do we want cracker biscuits that are not nuts? Well, we love nuts, and if you do as well, you know the temptation they hold, and once you’ve started it can be hard to stop. 

Besides, you can have too much of a good thing, and nuts are sadly one of those things that you can have too much of.

A lot of nuts contain phytic acid-like grains and very high amounts of Omega-6 fatty acids. Both of these can cause inflammation and digestive problems.

So, as good as nuts can be for you, it may be better to use alternatives. So, to still enjoy cracker biscuits without digestive issues, or inflammation, we found coconut flour to be the best choice.

How To Make These Paleo Coconut Cracker Biscuits

These are paleo-friendly, nut-free crackers that are sweet and tasty and will satiate your cravings for sure. Here is how to make them!

Ingredients

Firstly you want to gather your ingredients. 

If there are any ingredients you do not like, feel free to substitute them. That is the brilliance of these crackers, they are customizable!

  • Coconut Flour ½ cup. 
  • Tapioca Flour ¼ cup.
  • Sea Salt ½ tsp.
  • Eggs x2.
  • Water ¼ cup.
  • Extra virgin olive oil ¼ cup.

You can also add in herbs and spices as well. We like to use pepper, garlic powder, onion powder, and rosemary, but feel free to choose the herbs and spices that you like most.

Step-By-Step

How To Make Paleo Coconut Cracker Biscuits

If you are tempted by these cracker biscuits, follow these steps to make them. They are not hard to make and beginners can easily make them! 

Step 1

Preheat your oven to 350 degrees (F). 

Step 2

Mix the coconut flour, tapioca flour, salt, pepper, and herbs, and spices of your choice together in a bowl. 

Step 3

Get another bowl, and in this, crack the eggs, and whisk the eggs together with the extra virgin olive oil and water. 

Step 4

Pour the egg, water, and oil mixture together into the dry ingredient mixture, and mix until you get a dough. 

Step 5

Once you have a nice firm dough, place the dough in between 2 layers of parchment paper and roll it out with a rolling pin.

Try to roll it as thin as you can without allowing the dough to break. The thinner you make the dough, the crispier your crackers will be! 

Step 6

Take the top layer of parchment paper away, and get a knife. Use the back of the knife to gently slice your dough into 2-inch squares. 

Step 7

Now put in the oven and bake your dough for 20 to 25 minutes. Do not leave it alone, regularly check on it to ensure that the edges of your crackers are not burning. 

Step 8

Should the crackers at the center be soft, but the outer crackers are ready, you can remove these and allow the softer ones to continue baking for 5 more minutes to allow them to crisp up. 

Step 9

Once the crackers are cooked, allow them to cool before you serve them. 

Why Is Coconut Flour Ideal?

For this recipe, and to optimize these cracker biscuits for health and a paleo diet, using coconut flour just makes sense.

Nut flours are great, but nutty flavors can be addictive, and while nuts have lots of good in them, it’s only good in moderation. 

So, coconut flour is best. Coconut flour does not have the potential to cause digestive issues, or inflammation, so it is better for you and makes them easier to digest.

If you are worried they might be a bit too soft, remember that the trick with using coconut flour like this is to roll out the dough as thin as you possibly can to ensure extra crispiness from your crackers. 

Do not forget to keep an eye on them as they cook as well, while you want them thin, you also do not want them to burn either.

We highly recommend making these with some garlic powder, as it gives it an extra kick in the flavor. However, you can use whatever you want, and if you do not like garlic, feel free to use whatever your favorite spices are in these crackers. 

Feel free to pair this with dips. We recommend a garlic and herb dip, or a tasty zucchini hummus! Guacamole works well with these too!

These cracker biscuits are super easy to make and only take around 30 minutes to make. They are also very beginner friendly and do not take much effort.
